Sesame Chicken Bake (oven)

This dinner will satisfy without putting you to sleep! Made with diced chicken and green peppers, carrots, scallions and cashews, tossed with a sesame soy sauce over rice, then topped with crunchy chow mein noodles, it is a light and healthy choice.  Bread Pudding with Spiced Rum Caramel Sauce is a nice finish!
